
Ice Cream Muffins

1 1/2 c. enriched self-rising flour OR all-purpose flour |
1 1/2 Tbsp. baking powder |
3/4 tsp. salt |
2 c. vanilla ice cream (or flavored, if you prefer), melted |
3/4 c. cinnamon, chocolate or peanut butter chips, or combination |
Directions:
1. Preheat oven to 350°F.
2. Measure dry ingredients into a medium bowl; stir in ice cream just until flour is moistened. Stir in chips. Spray muffin cups with nonstick spray and fill cups 3/4 full.
3. Bake for 20 minutes or until golden brown.
